Ingredients
- 1 cup dried mung beans (monggo)
- 200 g pork belly, diced
- 1 bunch spinach or malunggay leaves
- 2 tomatoes, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp fish sauce
- 5 cups water
Instructions
- 1 Boil the mung beans in the water until soft and bursting, about 40 minutes. Mash some for a thicker stew.
- 2 In a separate pan, sauté garlic, onion, and tomatoes, then brown the pork.
- 3 Add the cooked pork mixture to the beans along with the fish sauce. Simmer for 10 minutes.
- 4 Stir in the leafy greens and cook for 2 minutes until wilted.
- 5 Season to taste and serve hot with rice.
Tips
- Crispy fried pork or chicharrón on top adds great texture.
- For a vegetarian version, skip the pork and use soy sauce instead of fish sauce.
