Ingredients
- 1 kg pork belly or ribs, cut into chunks
- 1 packet (40 g) tamarind soup mix, or fresh tamarind
- 2 tomatoes, quartered
- 1 onion, quartered
- 2 L water
- 1 bunch kangkong (water spinach)
- 2 pcs taro (gabi), peeled and halved
- 1 daikon radish, sliced
- 2 long green chilies (siling haba)
- 2 tbsp fish sauce (patis)
Instructions
- 1 In a large pot, boil the pork with the onion and tomatoes in the water. Skim off any scum.
- 2 Cover and simmer for 40–45 minutes until the pork is fork-tender.
- 3 Add the taro and radish and cook until soft, about 10 minutes.
- 4 Stir in the tamarind mix and fish sauce. Taste — it should be pleasantly sour.
- 5 Add the green chilies and kangkong and cook for 2 more minutes until just wilted.
- 6 Serve piping hot with rice.
Tips
- Adjust sourness to taste with more tamarind, or use fresh calamansi for brightness.
- Swap pork for shrimp, fish, or beef for different versions of sinigang.
