Ingredients
- 500 g bihon (rice vermicelli)
- 300 g chicken breast, sliced thin
- 1 cup chicken broth
- 1 carrot, julienned
- 1/4 small cabbage, shredded
- 1 cup green beans, sliced
- 4 cloves garlic, minced
- 1 onion, sliced
- 3 tbsp soy sauce
- Calamansi or lemon wedges, to serve
Instructions
- 1 Soak the bihon in water for 10 minutes, then drain.
- 2 Sauté garlic and onion in oil, then add the chicken and cook until no longer pink.
- 3 Add the vegetables and stir-fry for 2–3 minutes until crisp-tender. Remove half for topping.
- 4 Pour in the broth and soy sauce and bring to a simmer.
- 5 Add the drained noodles and toss continuously until they absorb the liquid and turn tender.
- 6 Top with the reserved vegetables and serve with calamansi wedges.
Tips
- Don’t over-soak the noodles or they’ll turn mushy when tossed.
- A squeeze of calamansi at the table is essential — it lifts the whole dish.
