Ingredients

  • 10 egg yolks
  • 1 can (390 g) evaporated milk
  • 1 can (300 g) condensed milk
  • 1 tsp vanilla extract
  • 3/4 cup white sugar (for caramel)

Instructions

  1. 1 Make the caramel: melt the sugar in the llanera (oval mold) over low heat until amber, then swirl to coat the base. Let it set.
  2. 2 Gently whisk the egg yolks, evaporated milk, condensed milk, and vanilla — avoid creating bubbles.
  3. 3 Strain the mixture through a sieve for a silky texture, then pour over the caramel.
  4. 4 Cover the molds with foil and steam over low heat for 30–40 minutes until just set.
  5. 5 Cool completely, then chill for at least 2 hours. Invert onto a plate to serve.

Tips

  • Steam low and slow — high heat causes bubbles and a spongy texture.
  • Straining the custard is the secret to that signature smoothness.
