Ingredients
- 10 egg yolks
- 1 can (390 g) evaporated milk
- 1 can (300 g) condensed milk
- 1 tsp vanilla extract
- 3/4 cup white sugar (for caramel)
Instructions
- 1 Make the caramel: melt the sugar in the llanera (oval mold) over low heat until amber, then swirl to coat the base. Let it set.
- 2 Gently whisk the egg yolks, evaporated milk, condensed milk, and vanilla — avoid creating bubbles.
- 3 Strain the mixture through a sieve for a silky texture, then pour over the caramel.
- 4 Cover the molds with foil and steam over low heat for 30–40 minutes until just set.
- 5 Cool completely, then chill for at least 2 hours. Invert onto a plate to serve.
Tips
- Steam low and slow — high heat causes bubbles and a spongy texture.
- Straining the custard is the secret to that signature smoothness.
